Tippmann Innovation Hosts OSU Food and Biological Engineering Graduate Student for Summer Internship
Fort Wayne, IN (August 14, 2018): Ti Cold was proud to host Usoshi Chatterjee, a graduate student from The Ohio State University, as one of their summer interns. Usoshi was a major asset to the company’s Quick Freeze division by creating reports on test data aggregate from Ti Cold’s Patented Quick Freeze In-Rack Freezing technology.
The reports she created were essential in illustrating the efficiency of QF+ In-Rack Freezing over traditional blast freezing methods.
Usoshi is passionate about helping create new ways of integrating sustainability in the food supply chain. Her research includes analyzing the molecular structure various food types to help determine quality assurance for products at all stages of the food processing cycle. “The goal of our research is to eliminate waste before it ever reaches the consumer” says Chatterjee. She and her team determine which parts of the food processing cycle to optimize through shelf life and package testing. By examining factors such as heat and mass transfer principles in the scope of protein and dairy, and reviewing enzyme reactions and varying levels of moisture loss, they can determine which products on the market will help maintain quality assurance and reduce energy waste.

Many people think of sustainability as it pertains to engineering; however, I enjoy being able to translate non-engineering related processes to a variety of industries that can help multiple infrastructures. Usoshi is on track to get her PhD in Food and Biological Engineering and would like to focus on research and development or possibly academia. Ti Cold would like to thank Usoshi for all of her hard work this summer and wish her the very best as she continues her studies in the fall.
